 We are talking beef and it falls into 2 categories, tough cuts: the long slow cook and tender cuts: the quick cook. Different cuts require different preparations and in this class we will cover several of the most popular cuts and some lesser-known treasures. We will cover the anatomy from nose to tail and help you navigate your way though the cuts. You will be shown how to pan sear a steak properly, how to get that temperature you want, which cut to choose for a roast and which to choose for the barbecue. Everyone will then roll up their sleeves and prepare their own stuffed and rolled piece of beef to take home ready for the oven or barbecue. Before we finish up we will head outside to learn coal BBQ set-up from briquettes to lump coal and smoking to setting up heat zones. This class is mostly demonstration, some hands-on and lots of tasting

  •  Class begins at 12 noon. Duration of the class is between 3 and 4 hours.

  • If particular cuts of meat or products are unavailable at the time of class another product of Cod Sounds choosing will be substituted without notice. Please ask if there is something very particular you are coming to see demonstrated.
  • The home of the Cod Sounds Cookery School is located in The Compton House Inn, 26 Waterford Bridge Road, St. John's NL
  •  Maximum of eight people per class. This enables a hands-on and personal approach so you can get the most out of your learning experience.
  • Your purchase of a cooking class is non-refundable. If you are unable to make the class you have chosen you can use your purchase for any other class offered as long as space is available.
